Pancakes with ‘Rögös túró’ filling

Ingredients for the pancake 
  • 20 dkg flour 
  • 2 eggs 
  • 3 dl milk 
  • 2 dl soda water 
  • pinch of salt 
  • 50 ml sunflower oil 

Ingredients for the filling 
  • 25 dkg ‘Rögös túró’ (lumpy curd cheese) 
  • 2 Tbs. sour cream 
  • 3 Tbs. icing sugar 
  • freshy grated lemon rind from one lemon 
  • 1 pkg. vanilla sugar or few drops of vanilla flavouring 
  • handful of raisin 
Preparation 

Beat the eggs with a pinch of salt. Add the milk and flour alternately and mix until lump-free. Add the soda water and put aside for an hour. 

Heat a little oil in a frying pan, and when it is hot enough, use a ladle to pour as much batter as thick you want your pancakes to be. When the bottom is fried, flip it over and fry the other half. 

For the filling, mix together the ‘Rögös túró’ filling, the sour cream, the grated lemon rind, the vanilla sugar (or vanilla flavouring) and the icing sugar, then stir in the raisins. Spread the filling on the pancakes, then roll them up.
